The team have been working for 8 years to build a major new vertical whisky distillery in Edinburgh, with a very modern approach to spirit production. In the meantime, they decided to make a gin that looked back and told stories about the remarkable heritage of Leith and Edinburgh where they are based. Lind & Lime Gin is created using seven carefully curated botanicals that work in harmony to create a fresh and balanced flavour profile. Lind & Lime Gin is the very first spirit produced by The Port of Leith Distillery Co at their Tower Street Stillhouse. It’s still a couple of years before they’ll be distilling whisky, so they’ve thrown their full and unbridled energy into creating a gin forged entirely from the talent, heritage and industry of Edinburgh and its historic distilling district of Leith. The Lind & Lime Gin comes from Edinburgh and combines neutral grain alcohol from Switzerland with juniper, lime, pink peppercorns, angelica root, liquorice root, orris root and coriander seeds. During the production, a blend of those botanicals without the lime is macerated with the alcohol at around 60 % ABV in the 500 l Genio still at low

This citrus led gin is named for Dr James Lind, and his clinical trial aboard the HMS Salisbury, which proved that citrus fruits keep Scurvy at bay. Traditionally, wines and spirits were transported in barrels, before being bottled in Leith. The Tower Street Stillhouse is our home for now and the production hub for our Lind & Lime Gin.
